"Hungry and half asleep in Hanoi, I just finished a 4.30am morning tour. Now all I need is a rich broth of goodness to wake me up."

From the outside, Pho Gia Truyen just looks like any other pho restaurant in Hanoi. Nothing really special. Although arriving just over 8 am, there was already a queue of people breakfast goers. The wait isn’t too long to get my phone out, in fact, there were only two people ahead of me. With the view of the counter in front of me, I was more interested in seeing how my bowl of pho was being prepared. The smell of the broth is so rich it permeates into your clothes and hair as soon as you walk into the restaurant. As I looked around it seemed customers were sat in silence focused on slurping their bowls of soup.

The restaurant serves Pho for all day from 6 am, but come early as everything will be sold out by noon!

The broth is simple with subtle undertones of different flavors. The is bowl is filled with rice noodles that are quite silky soft, it slips easily from your chopsticks. The thin slabs of briskets are generously topped with green onions and fresh herbs.
As you’re given your bowl of pho, the fragrant and sweet smell of the broth instantly travels through your nose.
Your bowl of pho only needs a hint of vinegar, red chili and hot sauce for that final touch.
